RASPBERRIES ON ACID
An imperial witbier brewed with oats, wheat, barley malt, orange peel, and coriander, then soured in the kettle with lactobacillus bacteria. Light hopping and fermentation with traditional witbier ale yeast result in a bigger-than-normal, pleasantly sour wheat ale. To get a little funkier, we then rack this beer to a fleet of red wine barrels from local vineyard Thatch Winery on top of one pound of raspberry puree per gallon of beer. This jammy raspberry explosion of a beverage remains one of our most anticipated seasonal releases each year.

CHERRIES ON ACID
For a creative first variant to this year’s batch, we’ve aged a portion of the brew on sweet cherry puree. The natural sugars of the fruit play with the high acidity in this special beer for a delicious sweet/tart combination that makes the cherry flavor bright and refreshing.

MANGOES ON ACID
For a creative second variant to this year’s batch, we’ve aged a portion of the brew on mango puree. The inimitable mango is often difficult for people to describe: it tastes sweet, tart, peachy, like pineapples, or like melon with floral hints and honey. No…it tastes like mango. Combine it with our pleasantly acidic Imperial Sour Witbier, and you have another delicious creation all its own.
