Raspberries on Acid with special variants CALAMANSI ON ACID and MARIONBERRIES ON ACID available to purchase on draft and in bottle while supplies last!
RASPBERRIES ON ACID
An imperial witbier brewed with oats, wheat, barley malt, orange peel, and coriander, then soured in the kettle with lactobacillus bacteria. Light hopping and fermentation with traditional witbier ale yeast result in a bigger-than-normal, pleasantly sour wheat ale. To get a little funkier, we then rack this beer to a fleet of red wine barrels from local winery Michael Shaps Wineworks on top of one pound of raspberry puree per gallon of beer. This jammy raspberry explosion of a beverage remains one of our most anticipated seasonal releases each year.
MARIONBERRIES ON ACID
For a creative first variant to this year’s batch, we’ve aged a portion of this brew on marionberry puree, a hybrid in the blackberry family. Growing mostly west of the Cascade Range, the rich, earthy, sweet-yet-tart balance of the Marionberry gives a taste of the mild maritime climate, gentle rains, and warm summers of Oregon’s Willamette Valley.
CALAMANSI ON ACID
For a creative second variant to this year’s batch, we’ve aged a portion of this brew on Calamansi puree, once understood to be an intergenetic hybrid, but now placed in the citrus family. Native to the Phillipines, Borneo, Sumatra, and Malaysia, the Calamansi offers a bright, tangy explosion of lime, lemon, Kaffir lime, and gentle tropical flavors.
